History of Adobo:

Adobo’s roots trace back to the Philippines’ colonial era, where the cooking method of marinating meat in vinegar, salt, and spices served both as a means of preservation and flavor enhancement. Over time, this method evolved into what we now recognize as Adobo. Its popularity stems from its versatility, as it can be made with various proteins like chicken, pork, or even vegetables, all simmered in a tangy, savory sauce.

 

Ingredients:

    • Half Cup of Native Coconut Vinegar 
    • Half Cup of Water
    • ¼ Cup of Worcestershire Sauce (medium soy blend)
    • ¼ Cup of Light Soy Sauce
    • 1 Bulb Crushed Garlic (Skin included)
    • 1 Bulb Chopped Garlic
    • 2 Whole White Onions (Strips)
    • 1 Tbsp butter
    • 2 Tbsp Brown Sugar
    • 1 Tbsp Whole Black Pepper
    • ½ Tbsp Ground Pepper
    • ½ Tbsp Salt
    • ½ Tbsp Annatto powder
    • 4 Bayleaf/Dried Laurel Leaves
  • Haight’s Farm Herb Seasoning

 

Procedure:

  • Preparation:
      • Coat the chicken with Salt, Ground pepper & Haight’s Farm Herb Seasoning.
      • Crush the Garlic (Skin included).
      • Slice the Onions into strips.
  • Searing:
      • Brush your pan with oil.
      • Add Annatto powder and cook over high heat until it produces bubbles.
      • Sear the coated chicken over high heat for 2-3 minutes per side.
  • Sauté:
      • In the same searing pan, add oil and butter.
      • Caramelize the onions.
      • Add the Crushed Garlic.
      • Add the seared chicken.
  • Boiling:
      • Add water and whole pepper, then let it boil for 5-10 minutes.
      • Add Coconut Vinegar or preferred vinegar and cook for 1-2 minutes until it starts to boil again (Do not stir during this process).
      • Add Worcestershire sauce and Knorr seasoning, cooking for another 5 minutes. Turn off the heat.
  • Emulsify:
      • In a new pan, add ¼ of the adobo sauce.
      • Add Chopped Garlic.
      • Add brown sugar.
      • Add bay leaf.
      • Bring to a boil and cook while stirring for 2-3 minutes.
      • Transfer it back to the chicken pan and combine well.
  • Serve and Enjoy!
    • Garnish with additional Haight’s Farm Herb Seasoning for an extra burst of flavor.
